Tonight, we used a recipe from "1000 Vegan Recipes" cook book. Apparently, 6 people are trying all the recipes and blogging their way through it too. See their blog here.

Here is our beautiful kale. I have had it before, but with Troy's prep cook style, it really turned out nice to eat/fork into our mouths.

We used ketchup without HFCS and we used sour cream substitute on our mashed potatoes. Seriously, who knew vegans could eat so much!
