heathly coleslaw

I made this yummy healthy coleslaw today, a derivitive of my mother in law's. Cindy's recipe:
2 heads of cabbage,
2 or 3 tsp. salt
4 cups sugar
3 cups vinegar
1 cup water
1 onion
1 or 2 peppers(red or green)
1 Tbsp. mustard seed
1 Tbsp. celery seed
1 bunch celery(cut fine)

Chop the 2 heads of cabbage, sprinkle with salt and let stand in its own juice for 2 hours in a cool place.
Then squeeze all the water out.
Bring the sugar, vinegar and water to a boil and let cool.
Add the peppers, celery, onion, mustard seed and celery seed to the cabbage.
Combine all with the liquid and store in glass jars in the refrigerator.
Will keep 2 weeks.

I used all the same ingredients, but just 'winged' it and didn't measure anything. I just tossed in the shredded cabbage, red onion, red pepper, shredded carrots, chopped celery, threw in a tiny salt, organic apple cider vinegar, celery seed, mustard seed, no water and I used AGAVE for my sweetner and not sugar. I used as little as possible.

Before eating, I sprinkle with chia seeds and a little flax seed! Healthy and YUM!
